Can I Buy and Fit My Own Second Hand Windows and Doors?

I'm frightened by the cost of double glazing my flat, so I'm looking at buying 2nd hand windows and doors and fitting them myself.

My back (french) doors are 1920mm wide and 2500 high. In addition the bricks above the window make a stone arch.

Looking online it seems I won't be able to get a door to just fit.

How possible is it for me to get a smaller door and 'fill' around the edges?

If so, what would be the maximum size gap I could have? Could I build some wood structure that filled a foot on each side for example?

from what I can see, in the picture, you can take off the side panels and the top panel so you will be left with the basic door size, they should unscrew, if you take the glass out,

Thanks for your reply mate!

The problem with leaving the side panels is they are single glazed (though I suppose I could fill the windows in). Also, the wood is quite old and a bit decayed, so I'd rather build from new with maybe a plastic shroud to match the relacement doors?
