Combiboiler - hot water too hot

The settings for hot water is on the lowest on the boiler and when I run the hot water (anywhere in the house) the water becomes too hot. If I try to mix it with cold water it doesn't make a difference to the temperature, unless I turn the hot water right down, but then the pilot light in the boiler turns off.
Also the pressure in the boiler doesn't hold, I have to open the main water supply to the boiler until it reaches the right pressure. I do this once about every other week.
Any suggestion or help would be welcome.
