I am erecting a timber and plasterboard partition and will get a carpenter later to fit a 2' 6" door in it.
What size space should I leave in the partition, just the width of the door + lining or a bit (lot) more ?

Width of each side of the door, door lining + 8mm. A pre-made door lining will be cut to teh exact size for a 2' 6'' door so the 8mm allows for a little movement of the lining in the opening to make sure its completley square
