Fire Place buildup

Hi, I have just removed Fireplace and fire surround where upon finding out the brickwork buildup actually steps out in two spots. I have two ways of completing the project but I am in a bit of a dilema.

1st method is to batten the wall, bring the board and dry lining plaster board to the furthest position coming out on the brickwork so I can insert my new fireplace flush with the furthest brickwork buildup.
2nd method is to remove the stepped brickwork and the added on brickwork from the original brick fireplace and then re building the wall and then plastering it.

I would appreciate any information reguarding whether the first method is viable. An electric fireplace is being inserted into this chimney breast.

1st method will be OK as long as you don't have a proper fire. 2nd method would be the preferred one.
