fitting edge strip to worktop

Help How do you fix the edge strip to a laminate worktiop? The strip that came with the worktop is slightly too wide, how do you shave off the excess and how do you make the edge watertight?

Not sure if this is still the way, but I can remember my Dad doing this many years ago! he used to iron the strip on ( he always kept an old iron in the garage) and then he would carefully cut the excess off with a blade and then gently file each edge/rub with sand paper.
Not sure on the water tightness off this, maybe I should of watched for a bit longer!
