Floorboards in Kitchen

I am currently redecorrating my kitchen and i am wanting to sand down and varnish up the floor boards in there.

Is this ok to do in the kitchen or will spilled water damage them?

Is there a non slip waterproof varnish i can put on them that you recommend?
