Insulation of Renovation Project With Stripped Back Bare Walls

I’m putting in insulation in a renovation project which has been stripped back to the bare walls. There is a cavity wall with fluff type insulation inside but I’m going to put up a stud wall and insulation inside.

Should I place the insulation directly on the wall then the stud wall afterwards?

How many inches of insulation (solid) should I use?

What’s the process involved?
