Internal Wall Drylining Question for 1950's Cottage Restoration

Hi all,
im currently gutting a 1950 cottage here in ireland and need some help/opinions.
The house has been drylined on all internal /external walls using battons/foil backed board and insuation.
The issue i have is im knocking internal walls and raising roof witch will leave big voids etc. would it be worth my while stripping all the dry lining and redo / maybe fix insualted boards all around as the house isnt big by any means.
