Kitchen Cabinet Lights

I'm replacing some 'under cupboard' kitchen lights from small flourescent tubes to halogen lights (the triangle shaped, brushed metal ones). The cable going into the lights is live/neutral/earth but the transformer for the new ones is for connecting live/neutral only, what do I safely do with the earth wire?

As you can tell this is the limit to what I'd attempt electrical-wise.

Tape it up so its there if you ever change it again.
