replastering external wall

I have stripped the plaster from an external wall in a bed room of our 1930's house. The wall is not a cavity wall and the mortar is very dry (at least it seems so to me!) I am confused as different plasterers propose different methods, one would use sand and cement, others dot and dab, another bonding. What are the pros and cons of these?
