Skimming or Replacement After Pulling off Tiles for Bathroom Renovation

This is a first for me. I've been renovating my bathroom.

Thus far I have pulled all of the tiles from the wall, leaving a bit of a mess. (images attached). Originally I was going to pull off the boarding and replace.

I have pulled off a built-in shelf made of a frame and clearly plasterboard. However the walls are a different material. They are wooden framed with a honeycomb centre - much more rigid, but along with the hole it has pealed like think brown paper in places.

This was the original idea as it seem to be the done thing[for plasterboard]. I have since been told I can't simply pull off the face and replace.

Looking for some guidance on what to do here:
