    Does anyone know of a way that I can tee off of a pipe that is almost solid and has no flex in it.

    The only way to do this is to cut out a section and "adapt" a coupling so it will slide along the pipe. Replace the cut out section and slide the coupling back along to re-connect the pipe. Cutting out a section means you will end up with two joints.
