Awkward Coving Cutting and not Sitting on Walls Surface

I am just about to embark on some difficult pieces of coving.

Some of the coving I need to put up won't be sitting on the wall, because some architrave for a fan light sits on the wall about 2 inches below the ceiling. So my coving wlil not fit between the architrave and the ceiling without me cutting the coving on the bottom/wall edge .

So I need to make a cut along the length of a piece of coving to allow for the thickness of the architrave which is about 1/2 inch.

Does anyone have any tips on how to mark the coving for cutting under these circumstances and also for cutting it.
