Fireplace Renovation Help After Removing old Freestanding gas Fire

Hi. I'm getting a old 'freestanding style' gas fire removed. I had thought of some type of boxing off of the space left behind it or covering it, either way making it a decorative piece. I've read somewhere about needing to block off the chimney and putting in vents. We haven't had any indications that animals or weather has gotten in before and we have no draughts etc and with the chimney not being used for a live fire for many many years assume this has been done, but what's the best way to check and the best way to provide vents if these are needed without it looking unsightly?
