Definately a Vaillant Ecotec 24 ???? this is a combi boiler

The Vaillant Ecotec system boilers are

Vaillant Ecotec Plus
612 - 12kw
615 - 15kw
618 - 18kw
624 - 24kw ?????? possibly yours ?
630 - 30kw
637 - 37kw

Please confirm the boiler you have.

Sorry mis-read your post I thought it said Vaillant Ecotec 24, but it says 24kw.

What is the HW thermostat set to ? does turning the thermostat up solve the problem ?

If no luck, get the installer back to check the gas pressures. As the water is getting hot, but not hot enough it may be the gas pressures are not set correctly therefore unable to heat the water effectively.
