painting remodelled kitchen

I've just had my kitchen redone with one of the walls completely replastered and a skim on the ceiling and various parts of the wall.

My intention had been to use a 'kitchen' paint for the final coat on the ceiling and walls. But a) I'm unsure whether this is a good idea and b) whether it is or not, I'd appreciate some advice on how to approach the initial coats on the replastered/skimmed surfaces.

Good contractors base coat or two, then specialist kitchen paint if desired.
