re-vamp of attic rooms

Hi all,

we have moved into a 3 storey house so that my disabled son can have the top floor as a flat. The rooms he has are mostly ok but the middle room, his lounge, has very thickly varnished wood walls and ceiling (kinda tongue and groove). He really dislikes this (and it is very dark) and wants to have the whole room redone with plaster board. I know we wont be able to do this alone and will need to get someone in, My question is this, will the plaster boarder put the boards over the existing walls and ceiling (it is in hte eves so is a shaped) or will he/she remove the existing wood? Thanks in advance :-)
