Rendering a chimney

Hi all, I have recently had to repair my chimney, by slabbing the top and replacing the pot, due to a change in our heating. I now need to repair the rendering around the chimney. Do I need to apply a scratch coat, or could I get away with just one thick coat of render ? Also, what mix should I use, if I have to use 2 coats ? Sharp, or plastering sand ? Obviously, the least time I am up the ladder, the better !! Many thanks.
