which service valve

if i want to isolate the hot supply from the hot water tank to the taps, which service valve is the best one to turn off?
i`am trying d.i.y as you can see iam not very bright.

is there a gate valve on the hot water draw off from the tank ? normally a round red handle - if yes close this - don't overtighten as they do sheer off inside.

If not, then isolate the cold supply to the tank, by either turning off the mains stop tap - or the tank stop tap which is before the ballvalve , and let the taps run until the water stops.
