Advice on Blocking up a Doorway After Combining Bathroom and Toilet

My house has separate toilet and bathroom adjacent to each other, I want to combine them into one room.
I have already removed the partition wall so the next job is to remove the old toilet door and block up the doorway, as the other bathroom door will now be the only way in.

What are my options for blocking up the doorway? I will want it plastered both sides and might be hanging heavy mirrored bathroom cabinets on the inside.
Should I brick it up or build a stud wall with plasterboard?

What are the pros/cons of both and also approx costs if I get someone in to do it?
