I want to modernise my coving, how do I remove the old coving without causing too much damage?

Depends on method coving was fixed and what type of wall it was applied too. I make a cut with stanley type knife around the edge of coving deep enough so to avoid to much plaster damage or paper tears on board if joint filled instead of plastered. Thens it's a hammer and chisel job, with chisel held at about 30% angle.
